Annyeong, yeoreobun! It's Yul from KVIBE IDOLS. Today we're making sundubu jjigae, spicy soft tofu stew. It comes to the table still boiling, and then you crack a raw egg into it. So dramatic!
Sundubu means very soft, silky tofu. It's so soft it comes in a tube, not a block.
Let's cook. In a small pot, heat one spoon of oil. Add one spoon of chili flakes, gochugaru, and a little minced garlic, and stir on low heat for thirty seconds. This makes a red chili oil. Careful, don't burn it!
Add a little sliced pork or some clams and shrimp, and stir. Pour in one and a half cups of anchovy broth or water. Add a spoon of soy sauce and a pinch of salt.
When it boils, squeeze in the soft tofu and break it into big pieces with a spoon. Add sliced onion and green onion. Boil for three minutes.
Now the best part. Crack one egg on top, turn off the heat, and serve right away. The egg cooks slowly in the hot stew.
Yul's tip! Korean restaurants let you choose your spice level, from mild to very spicy. Start mild. Trust me. Masitge deuseyo!
