Annyeong, yeoreobun! It's Yul from KVIBE IDOLS. When winter comes in Korea, you see little street stalls with a warm, sweet smell. That's hotteok, sweet filled pancakes.
The dough is chewy, the outside is crispy, and inside there's melted brown sugar. Be careful with the first bite. It's lava!
Let's make the dough. Mix one cup of warm water, one spoon of sugar and one teaspoon of dry yeast. Add two cups of flour, half a cup of sweet rice flour and a pinch of salt. Mix it into a sticky dough. Cover it and let it rise for one hour, until it's double.
Now the filling. Mix half a cup of brown sugar, one teaspoon of cinnamon and a handful of chopped nuts.
Oil your hands. Take a ball of dough, flatten it, and put one spoon of filling in the middle. Close it like a little bag.
Put it in an oiled pan, seam side down. After one minute, flip it and press it flat with a spatula or a cup. Cook both sides until golden.
Yul's tip! In Busan, they add seeds to the filling. It's called ssiat hotteok, seed hotteok, and it's famous at the market near Nampo. Try it if you visit! Masitge deuseyo!
