Bingsu빙수 · bingsu

What is it?

Snow-like shaved milk ice piled high with toppings: classic patbingsu has sweet red beans and rice cakes; modern versions use mango, strawberries, injeolmi powder or cheesecake. One bowl is meant to be shared by two or three.

How to eat it

  1. Mix toppings into the ice as you go so it does not melt into a puddle.
  2. Ask for extra spoons — sharing is normal.
  3. Summer seasonal menus (mango, melon) appear in hotels and chains.
