Jokbal & Bossam족발·보쌈 · jokbal, bossam

What is it?

Jokbal is pig's trotter simmered for hours in soy sauce and spices, sliced and served cold or warm; bossam is tender boiled pork belly. Both are wrapped in lettuce with spicy radish kimchi, garlic and salted shrimp — a classic shared meal with soju, and Seoul's Jangchung-dong is famous for its jokbal restaurants.

How to eat it

  1. Dip a slice in saeujeot (salted shrimp) before wrapping.
  2. Sizes are small/medium/large; a "jok-bo" set mixes both.
  3. Very popular for late-night delivery.
